Isomaltose (CAS: 499-40-1) is a mixture of short-chain carbohydrates made of glucose molecules which are linked with each other through a digestion resistant bonding. Isomaltose is a high quality, high-purity Isomaltooligosa-ccharide (IMO), made from enzymatic conversion of starch. It functions as a dietary fiber, prebiotic and low-cal-orie sweetene. Isomaltose is a disaccharide in which two glucose molecules are linked by an alpha-1,6 glycosidic bond. Because of the different molecular conformation, it is called isomaltose to distinguish it from maltose. Generally, maltose is readily fermentable by yeast, whereas isomaltose is not fermentable by yeast and is a non-fermentable oligosaccharide.
Isomaltose is a disaccharide sugar found naturally in some plants and is also known as a maltose isomer. It is composed of two glucose molecules joined by an alpha-1,6 glycosidic bond. Isomaltose has a variety of applications in the food and pharmaceutical industries, and is an important component of the human diet. It is also used as a carbohydrate source in laboratory experiments and is an important metabolic intermediate in the biosynthesis of some proteins.
